Vegetable Stir Fry

Ingredients:

  • 2 tbsp Coconut Oil
  • 2 cloves Garlic minced or pressed
  • 1 tbsp Fresh Ginger minced or pressed
  • .5 c Red Onions sliced
  • 8 oz Shiitake Mushrooms sliced
  • .5 lb Bok Choy chopped
  • 1 c Broccoli chopped
  • 1 Carrots shredded
  • 2 tbsp Coconut Aminos Or Tamari

Instructions:

  • In a large skillet heat up coconut oil over medium-high heat. When it starts to shimmer add garlic and ginger stirring constantly until aromatic, about 1-2 minutes. 
  • Add onions and mushrooms stirring until tender, 3-5 minutes. 
  • Add bok choy and broccoli. Stir together with other ingredients and cover for 3-5 minutes to allow greens to steam. 
  • Add carrots and coconut aminos/tamari. Stir ingredients together and continue to cook another 2-4 minutes to allow carrots to become tender and serve!
