Tomato Feta Soup
Ingredients:
- 2 tbsp Butter
- .25 c Onions chopped
- 3 cloves Garlic minced or pressed
- .5 tsp Sea Salt
- .125 tsp Ground Black Pepper
- .5 tsp Dried Oregano
- 1 tsp Dried Basil
- 1 tbsp Tomato Paste
- 29 oz Whole Peeled Tomatoes
- 1 tsp Honey
- 3 c Water
- .33 c Heavy Cream
- .66 c Feta Cheese crumbled
Instructions:
- Heat butter over medium heat in a large pot. Add the onions and cook for 2 minutes, stirring frequently. Add the garlic and cook for 1 minute. Add tomatoes, salt, pepper, oregano, basil, tomato paste, and water. Bring to a boil, then reduce to a simmer. Add honey.
- Cook on medium heat for 20 minutes, until the tomatoes are tender and cooker. Using an immersion blender, blend until smooth. Add the cream and feta cheese. Cook for 1 more minute. Enjoy!
