Spicy Salmon and Avocado Salad

Ingredients:

  • 1 Avocado cut into 1/4-inch cubes
  • 1 Limes juice and zest needed
  • 2 tbsp Red Onions finely diced
  • 1 tsp Sea Salt
  • 1 lb Salmon Fillets cut into 4 fillets
  • .5 tsp Ground Black Pepper
  • 16 oz Mixed Baby Greens optional
  • 1 tsp Coconut Oil

Instructions:

  • Heat skillet with coconut oil. When shimmering, cook salmon on each side for about 3-4 minutes on each side. Set aside and let cool. 
  • Combine remaining of the above ingredients in a bowl. Using a spoon or fork, gently break up the salmon into little pieces.
  • The avocado will mash slightly, but you will still have some larger chunks dispersed throughout the salad. 
  • Throw the salad on top of mixed baby greens.
