Spicy Salmon and Avocado Salad
Ingredients:
- 1 Avocado cut into 1/4-inch cubes
- 1 Limes juice and zest needed
- 2 tbsp Red Onions finely diced
- 1 tsp Sea Salt
- 1 lb Salmon Fillets cut into 4 fillets
- .5 tsp Ground Black Pepper
- 16 oz Mixed Baby Greens optional
- 1 tsp Coconut Oil
Instructions:
- Heat skillet with coconut oil. When shimmering, cook salmon on each side for about 3-4 minutes on each side. Set aside and let cool.
- Combine remaining of the above ingredients in a bowl. Using a spoon or fork, gently break up the salmon into little pieces.
- The avocado will mash slightly, but you will still have some larger chunks dispersed throughout the salad.
- Throw the salad on top of mixed baby greens.
