Spicy Chicken in Cashew Sauce
Ingredients:
- 1 tbsp Olive Oil
- 1.5 lbs Boneless Skinless Chicken Thighs
- 1 c Onions large, chopped
- 29 oz Diced Tomatoes 2 cans
- 14.5 oz Crushed Tomatoes 1 can
- 2 tbsp Honey
- 2 tsp Cumin ground
- 1 tsp Cinnamon
- 0.33 c Cashew Butter
- .25 tsp Crushed Red Pepper Flakes
- 1 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- In a 4 quart (or larger) crock pot, combine onions, tomatoes, honey, red pepper flakes, cumin and cinnamon.
- Add chicken then spoon tomato mixture over chicken.
- Cover and cook on low heat setting for 6-7 hours.
- Stir in cashew butter, salt, and pepper until melted and well blended just before serving.
