Slow Cooker Sweet Potato and Lentil Tikka Masala
Ingredients:
- 1 c Onions chopped
- 4 cloves Garlic minced or pressed
- 4 c Sweet Potatoes peeled and cubed, 2 large
- 1 c Red Lentils
- 1 tbsp Garam Masala
- 2 tsp Curry Powder
- 1 tsp Ground Ginger
- .5 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 6 oz Tomato Paste
- 1 qt Vegetable Broth
- 13.5 oz Full Fat Canned Coconut Milk 1 can
- .25 c Fresh Cilantro chopped for serving
Instructions:
- Place all ingredients except coconut milk in a 5- to 6-quart slow cooker coated with cooking spray; stir well to combine. Cover and cook on low 8 hours. Turn off heat; stir in coconut milk. Let stand, covered, 5 minutes.
- Serve with cilantro on top, ideally on rice.
