Simple Carrot Salad
Ingredients:
- 2 lb Carrots peeled and shredded
- 1 c Canned Pineapple chopped
- 1 c Shredded Coconut
- .25 c Dried Cranberries
- .25 c Walnuts chopped
- .25 c Almonds chopped
- 1 c Full Fat Canned Coconut Milk (for dressing)
- 2 tbsp Avocado Oil (for dressing)
- 2 tbsp Apple Cider Vinegar (for dressing)
- .25 tsp Sea Salt (for dressing)
Instructions:
- In a large bowl with a lid, combine all of the salad ingredients and gently mix together.
- Pour the dressing over the salad.
- Stir together until the dressing is incorporated.
- Let marinate in the refrigerator for at least an hour before serving. The longer it sits, the better it tastes.
