Shrimp Creole
Ingredients:
- 2 tbsp Butter
- 1 c Onions chopped
- 1 Bell Peppers green, chopped
- 2 stalks Celery chopped
- 5 cloves Garlic minced or pressed
- 1.25 c Vegetable Broth
- 4 tsp Cajun Seasoning divided
- 1 tsp Paprika
- .125 tsp Cayenne Pepper Flakes
- 4 Dried Bay Leaf
- 2 c Tomatoes chopped
- 1 tbsp Worcestershire Sauce
- 1 tsp Hot Sauce Louisiana Style if you can find it
- .5 tsp Sea Salt
- 2 tbsp Olive Oil
- 1.5 lb Shrimp peeled & deveined, raw, medium
- 1 bunch Green Onions chopped
Instructions:
- Melt butter in a large skillet over medium-high. Add onion, bell pepper, celery, and garlic. Cook, stirring occasionally, until vegetables are softened by not browned, about 5-7 minutes.
- Add vegetable stock, 2 tsp cajun seasoning, paprika, cayenne, and bay leaves. Bring to a boil over high, reduce heat to medium and simmer until slightly reduced, about 5 minutes. Stir in tomatoes, and cook, stirring occasionally, until slightly thickened, about 10 minutes.
- Stir in green onions, Worcestershire sauce, hot sauce, and salt. Cook, stirring often, until thick, but still a little saucy, about 10 minutes. Set aside.
- Heat oil in a large skillet over medium-high heat. Add shrimp and sprinkle with remaining cajun seasoning and cook, stirring often until slightly pink, 1-2 minutes.
- Add creole sauce to shrimp and cook, stirring until shrimp are cooked through and coated in sauce, 3-4 minutes.
- Serve over rice or starch of choosing.
