Peanut Dressing

Instructions:

  • Heat oil in a large skillet over medium-high heat. Add chicken and saute for 7-8 minutes until browned. Add tamari and sriracha, and cook another 3-4 minutes until chicken is fully cooked.
  • While chicken is cooking, in a medium bowl make the dressing, mix peanut butter, tamari, lime juice, honey, and ginger. Add water a teaspoon at a time whisking to combine. 
  • Divide vegetables between four bowls. Top vegetables with cooked chicken.  Top with dressing and peanuts and sesame seeds, if desired.
  • Bowls will keep in fridge up to 5 days, can be served warm or cold! Great lunch option!
