Peanut Chicken Bowls
Ingredients:
- 1 lb Boneless Skinless Chicken Breasts cut into 1 inch cubes
- 1 tbsp Olive Oil
- 1 tbsp Coconut Aminos Or Tamari
- 1 tsp Sriracha Sauce
- 1 c Red Cabbage sliced
- 1 Bell Peppers red, sliced
- 1 c Shredded Carrots
- 1 c Romaine Lettuce
Peanut Dressing
- .33 c Peanut Butter
- 1 tbsp Coconut Aminos Or Tamari
- 1 tbsp Lime Juice
- 1 tbsp Honey
- 1 tsp Ground Ginger
- .25 c Water
- .25 c Peanuts chopped
- 1 tbsp Sesame Seeds optional
Instructions:
- Heat oil in a large skillet over medium-high heat. Add chicken and saute for 7-8 minutes until browned. Add tamari and sriracha, and cook another 3-4 minutes until chicken is fully cooked.
- While chicken is cooking, in a medium bowl make the dressing, mix peanut butter, tamari, lime juice, honey, and ginger. Add water a teaspoon at a time whisking to combine.
- Divide vegetables between four bowls. Top vegetables with cooked chicken. Top with dressing and peanuts and sesame seeds, if desired.
- Bowls will keep in fridge up to 5 days, can be served warm or cold! Great lunch option!
