Pasta with Chickpea Sauce
Ingredients:
- 4 c Gluten-Free Pasta cooked penne (8 oz uncooked)
- 1 c Chickpeas drained, canned, unsalted
- 1 c Onions chopped
- 1 c Carrots chopped
- 4 cloves Garlic minced or pressed
- 0.25 c Fresh Parsley chopped
- 0.25 c Fresh Basil chopped
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
- 3 tbsp Olive Oil
- 0.75 c Water
Instructions:
- Cook penne gluten-free pasta according to its directions.
- While pasta cooks, heat olive oil in a skillet over medium heat.
- Add onion, carrot, and minced garlic; cook 8 minutes.
- Place onion mixture, chickpeas, water, salt, and pepper in a blender; process until smooth.
- Toss with hot, cooked penne; sprinkle with parsley and basil.
