Okra with Tomatoes
Ingredients:
- 4 cloves Garlic minced or pressed
- 2 tbsp Olive Oil
- 4 c Okra sliced lengthwise
- 1 c Onions cut into wedges
- .25 tsp Sea Salt
- .125 tsp Ground Black Pepper
- 2 c Cherry Tomatoes halved
- 1 tsp Apple Cider Vinegar
Instructions:
- Saute garlic in olive oil over medium heat until golden.
- Add okra (halved lengthwise) and onion wedges; season with salt and pepper and cook until the okra is tender and bright, 10 to 12 minutes.
- Add halved cherry tomatoes; cook until just bursting, 3 minutes. Finish with a splash of cider vinegar.
