Ingredients:

  • 1.5 lb Italian Sausage
  • 12 oz Cauliflower riced
  • 15 oz Marinara Sauce
  • .5 c Sour Cream
  • 1.25 c Ricotta Cheese
  • 2 c Mozzarella Cheese shredded
  • 5 cloves Garlic minced or pressed
  • .5 tsp Dried Oregano
  • .5 tsp Dried Basil

Instructions:

  • Brown the meat and season with the garlic, oregano, and basil.
  • Heat cauliflower in microwave for 4 to 5 minutes until slightly softened.
  • Add marinara sauce to meat and let simmer.
  • Combine the ricotta cheese, sour cream, and heated cauliflower, season with salt and pepper.
  • Layer into a greased 2-quart casserole dish beginning with the ricotta cheese mixture, then meat sauce, top with 1 cup shredded cheese. Repeat for a second layer, ending with shredded cheese.
  • Bake at 350° for 30 minutes until golden and bubbly.
