Ingredients:

  • parchment paper
  • 1 lb Salmon Fillets 4 oz each fillet
  • 2 tsp Fresh Oregano chopped
  • 1 tsp Sea Salt
  • 2 Zucchini thinly sliced
  • 2 Yellow Squash thinly sliced
  • 1 c Onions sliced
  • .25 c Lemon Juice
  • 4 cloves Garlic minced or pressed
  • 2 tbsp Olive Oil

Instructions:

  • Preheat the oven to 400 degrees F.
  • To prepare each packet, tear off a large sheet of parchment paper and fold it in half. Fold over two of the edges forming a seam. Fold multiple times if needed but leave one side open.
  • Season the salmon fillets with oregano and salt. Place 2 fillets in each parchment packet.
  • Divide the zucchini, squash, onion, lemon juice, garlic, and olive oil evenly between the packets.
  • Seal the remaining side of each parchment packet tightly by folding it over on itself several times.
  • Place packets on a baking sheet and bake for 15 minutes or until the salmon is flakey and has reached an internal temperature of 145 degrees F.
