Greek Salmon en Papillote
Ingredients:
- parchment paper
- 1 lb Salmon Fillets 4 oz each fillet
- 2 tsp Fresh Oregano chopped
- 1 tsp Sea Salt
- 2 Zucchini thinly sliced
- 2 Yellow Squash thinly sliced
- 1 c Onions sliced
- .25 c Lemon Juice
- 4 cloves Garlic minced or pressed
- 2 tbsp Olive Oil
Instructions:
- Preheat the oven to 400 degrees F.
- To prepare each packet, tear off a large sheet of parchment paper and fold it in half. Fold over two of the edges forming a seam. Fold multiple times if needed but leave one side open.
- Season the salmon fillets with oregano and salt. Place 2 fillets in each parchment packet.
- Divide the zucchini, squash, onion, lemon juice, garlic, and olive oil evenly between the packets.
- Seal the remaining side of each parchment packet tightly by folding it over on itself several times.
- Place packets on a baking sheet and bake for 15 minutes or until the salmon is flakey and has reached an internal temperature of 145 degrees F.
