Gluten Free Meatballs

Ingredients:

  • .5 lb ground beef
  • .5 lb sweet italian pork sausage ground, removed from casings
  • 1 egg beaten
  • 4 cloves garlic minced
  • .5 carrot shredded
  • .5 c white rice cooked
  • .5 tsp sea salt
  • .25 tsp ground black pepper
  • .5 c parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried basil

Instructions:

  • Preheat oven to 375 degrees.
  • Mix all the ingredients together. Form into 1-1.5 inch balls.
  • Place meatballs on a rack on a baking sheet and bake for 18-22 minutes until browned and cooked through. 
  • Serve with a sauce of your choice - tomato, teriyaki, sweet and sauce, etc. Can be served with pasta, rice, or vegetables.
