Garlic Rosemary Pork Chops
Ingredients:
- 4 Pork Chops bone-in pork chops, 3/4 to 1 inch thick
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 1 tbsp Olive Oil
- 6 cloves Garlic sliced thin
- 1 c Chicken Broth
- 1 sprig Fresh Rosemary
- .5 tsp Fresh Rosemary minced
- 1 tsp Red Wine Vinegar
- 2 tbsp Butter
Instructions:
- Pat pork chops dry and season with salt and pepper. Heat oil in a large skillet over med-high heat until just smoking. Cook chops until well browned and meat registers 145 degrees, (about 5 min per side).
- Transfer to platter and cover with foil.
- Add garlic to empty skillet and cook until fragrant, about 30 seconds. Add broth and rosemary sprig and simmer, scraping any browned bits up with a wooden spoon until reduced by 1/2. (about 5 min)
- Discard rosemary sprig, add any accumulated pork juices back to the pan and whisk in minced rosemary, vinegar, and butter. Pour sauce over chops.
