Coconut and Lime Chicken
Ingredients:
- 2 lb Boneless Skinless Chicken Breasts
- 1 Limes zest only
- 1 tsp Cumin ground
- 1.5 tsp Ground Coriander
- 2 tbsp Coconut Aminos Or Tamari
- 1.5 tsp Sea Salt
- 2 tbsp Maple Syrup
- 2 tsp Curry Powder
- .5 c Full Fat Canned Coconut Milk
- .25 c Fresh Cilantro
- 2 tbsp Coconut Oil
Instructions:
- Butterfly the chicken breasts (slice in half) and then pound to 1/2 thickness.
- Place a skillet over medium high heat heat and add the coconut oil.
- Remove the chicken from the marinade (save the marinade) and fry until golden brown, roughly 3 to 4 minutes; flip an repeat.
- Remove the chicken from the pan and set on a place. Pour the marinade into the skillet and bring to a boil. Reduce the heat, add the chicken back in the skillet, and let simmer for 2 to 3 minutes.
