Chopped Thai Salad
Ingredients:
Dressing
- .33 c Olive Oil
- 3 cloves Garlic minced or pressed
- 3 tbsp Coconut Aminos Or Tamari
- 2 tbsp Water
- 2 tbsp White Vinegar
- 2 tbsp Honey
- 1 tbsp Sesame Oil
- 1 tbsp Fresh Ginger peeled and minced
- 1 tsp Lime Juice
Salad
- 1 bunch Kale large bunch
- 3 Carrots shredded
- 2 Bell Peppers red and yellow, sliced
- 1 c Fresh Cilantro chopped
- 3 Green Onions chopped
- .75 c Cashews
Instructions:
- Puree all the dressing ingredients in a food processor until smooth. Taste and adjust to fit your preferences. Transfer to a dressing jar and rinse the food processor out for use later.
- Place the cashews in the food processor and pulse 5 times to get a minced texture. Toss the kale, carrots, peppers, cilantro, green onions, and cashews together until well combined. Drizzle with the dressing, toss gently a few times, and serve immediately.
