Chicken Pad Thai Spaghetti Squash
Ingredients:
- 1 Spaghetti Squash halved
- 1 lb Boneless Skinless Chicken Breasts diced
- .25 c Coconut Oil
- 2 Eggs beaten
- 1 tbsp Fresh Ginger minced
- 2 tbsp Fish Sauce
- 3 cloves Garlic minced or pressed
- 1 Jalapenos finely diced
- 2 tbsp Lime Juice
- .25 Peanuts chopped
- 1 bunches Green Onions sliced
Instructions:
- Put skillet over medium-high heat add coconut oil and once hot, saute chicken, ginger, jalapeno, fish sauce, and garlic until chicken is cooked through.
- Push chicken to the side of the skillet and scramble eggs on the other side. Stir together and add spaghetti squash, peanuts, lime juice, and green onions.
- Can exchange the chicken for 1 lb of shrimp.
