Ingredients:

  • 1 Boneless Skinless Chicken Breasts
  • 4 slices Bacon cooked and crumbled
  • 2 Avocado
  • 1 Limes
  • .33 c Tomatoes diced
  • 4 tbsp Mayonnaise
  • 3 tbsp Fresh Cilantro chopped
  • .5 tsp Sea Salt
  • .25 tsp Ground Black Pepper

Instructions:

  • Preheat oven to 350 degrees. 
  • Cook chicken in the oven for 20-25 minutes until cooked through. Chop and let cool. 
  • While chicken cooks. Cut avocados in half and remove pits.
  • Scoop out avocados and mash in a bowl with a fork.
  • Combine mashed avocado with mayo, salt, and pepper.
  • Add diced chicken, most the bacon, tomatoes, most the cilantro, and juice from half lime
  • Add mixture into the avocado skins, sprinkle with remaining bacon and cilantro if desired.
  • Squeeze lime juice over top and serve.
