Chicken Club Stuffed Avocados
Ingredients:
- 1 Boneless Skinless Chicken Breasts
- 4 slices Bacon cooked and crumbled
- 2 Avocado
- 1 Limes
- .33 c Tomatoes diced
- 4 tbsp Mayonnaise
- 3 tbsp Fresh Cilantro chopped
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Preheat oven to 350 degrees.
- Cook chicken in the oven for 20-25 minutes until cooked through. Chop and let cool.
- While chicken cooks. Cut avocados in half and remove pits.
- Scoop out avocados and mash in a bowl with a fork.
- Combine mashed avocado with mayo, salt, and pepper.
- Add diced chicken, most the bacon, tomatoes, most the cilantro, and juice from half lime
- Add mixture into the avocado skins, sprinkle with remaining bacon and cilantro if desired.
- Squeeze lime juice over top and serve.
