Cauliflower and Onion Mash with Cheddar

Ingredients:

  • 0.50 head Cauliflower chopped
  • 1 tsp Olive Oil extra virgin
  • .25 c Onions chopped
  • 1 cloves Garlic minced or pressed
  • 0.25 c Cheddar Cheese shredded
  • 1 tsp Sea Salt
  • .5 tsp Ground Black Pepper

Instructions:

  • Steam cauliflower in a steamer basket over boiling water until tender, about 3-4 minutes. Mash with a fork. Sprinkle with salt and pepper
  • Meanwhile, heat a nonstick skillet with 1 teaspoon virgin olive oil over medium-high heat. Add onions and garlic and sauté until tender.
  • Add onions and garlic to mashed cauliflower and top with cheese.
