Cauliflower and Onion Mash with Cheddar
Ingredients:
- 0.50 head Cauliflower chopped
- 1 tsp Olive Oil extra virgin
- .25 c Onions chopped
- 1 cloves Garlic minced or pressed
- 0.25 c Cheddar Cheese shredded
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Steam cauliflower in a steamer basket over boiling water until tender, about 3-4 minutes. Mash with a fork. Sprinkle with salt and pepper
- Meanwhile, heat a nonstick skillet with 1 teaspoon virgin olive oil over medium-high heat. Add onions and garlic and sauté until tender.
- Add onions and garlic to mashed cauliflower and top with cheese.
