Brussels Sprouts Chips
Ingredients:
- 1 lb Brussels Sprouts outer leaves removed (these are the chips)
- 1 tbsp Coconut Oil or oil of your choice
- 1 tsp Sea Salt to taste
- .5 tsp Ground Black Pepper omit pepper for strict AIP
Instructions:
- Preheat oven to 350 degrees.
- Toss leaves with chosen fat and salt to gently coat each leaf.
- Place leaves on a large baking sheet in a (mostly) single layer. It doesn't have to be 100% perfect the way it does with kale chips.
- Bake for 8–10 minutes (more if necessary), being careful not to burn the chips. They should be crispy with some browned edges. Optional (my favorite method): turn the broiler on high for 1–2 minutes at the very end to get the chips extra crispy. Be sure to watch them VERY closely if you do this. In my oven, 10 min @ 350 degrees + 2 min broil = perfect chips.
- Serve immediately and enjoy! Optional: garnish with a bit of lime or lemon zest, cracked black pepper, Parmesan cheese, or toss together with a bit of freshly-squeezed lemon juice.
