Zucchini Pasta Caprese Salad

Ingredients:

  • 1 Zucchini medium, spiralized
  • 1 c Cherry Tomatoes halved
  • .75 c Mozzarella Cheese diced
  • .33 c Red Onions thinly sliced
  • 1 tbsp Red Wine Vinegar
  • .5 c Olive Oil
  • .5 c Fresh Basil
  • 2 cloves Garlic minced or pressed
  • .5 tsp Sea Salt

Instructions:

  • In a food processor, pulse basil and garlic clove. Combine oil and vinegar and slowly stream into processor. Add salt.
  • Run zucchini through a vegetable spiralizer. Cut into bite-sized pieces, if spirals are too long.
  • Combine zucchini, tomatoes, mozzarella, and red onions in a serving bowl. Pour in dressing and toss to evenly coat. Serve.
