Zucchini Pasta Caprese Salad
Ingredients:
- 1 Zucchini medium, spiralized
- 1 c Cherry Tomatoes halved
- .75 c Mozzarella Cheese diced
- .33 c Red Onions thinly sliced
- 1 tbsp Red Wine Vinegar
- .5 c Olive Oil
- .5 c Fresh Basil
- 2 cloves Garlic minced or pressed
- .5 tsp Sea Salt
Instructions:
- In a food processor, pulse basil and garlic clove. Combine oil and vinegar and slowly stream into processor. Add salt.
- Run zucchini through a vegetable spiralizer. Cut into bite-sized pieces, if spirals are too long.
- Combine zucchini, tomatoes, mozzarella, and red onions in a serving bowl. Pour in dressing and toss to evenly coat. Serve.
