Garlic Mashed Rutabagas

Ingredients:

  • 4 c Rutabagas peeled and diced
  • 4 cloves Garlic minced or pressed
  • 1 tsp Sea Salt
  • 2 tsp Olive Oil

Instructions:

  • In a medium saucepan, combine rutabagas, salt, and garlic. Add water to cover rutabagas and cover saucepan and bring to a boil over high heat for 5 minutes.
  • Reduce heat to low and simmer for 30 minutes or until rutabagas are fork-tender.
  • Drain the rutabagas and transfer to a food processor. Add olive oil and puree until it reaches your desired consistency.
