Place onion in slow cooker and top with carrots and potatoes.
Combine both, wine, thyme, garlic, .5 tsp salt and .25 tsp pepper. Pour over vegetables.
Combine paprika, remaining salt and pepper and rub over chicken. Heat a large non-stick skillet over medium-high heat. Add oil. Add chicken. Cook 3 minutes on each side or until browned. Arrange chicken on top of vegetables.
Cover and cook on LOW for 3.5 hours or until chicken is done and vegetables are tender.
