Chicken Pad Thai Spaghetti Squash

Ingredients:

  • 1 Spaghetti Squash halved
  • 1 lb Boneless Skinless Chicken Breasts diced
  • .25 c Coconut Oil
  • 2 Eggs beaten
  • 1 tbsp Fresh Ginger minced
  • 2 tbsp Fish Sauce
  • 3 cloves Garlic minced or pressed
  • 1 Jalapenos finely diced
  • 2 tbsp Lime Juice
  • .25 Peanuts chopped
  • 1 bunches Green Onions sliced

Instructions:

  • Put skillet over medium-high heat add coconut oil and once hot, saute chicken, ginger, jalapeno, fish sauce, and garlic until chicken is cooked through. 
  • Push chicken to the side of the skillet and scramble eggs on the other side. Stir together and add spaghetti squash, peanuts, lime juice, and green onions.
  • Can exchange the chicken for 1 lb of shrimp.
