Vegetarian Stuffed Peppers

  • Cut peppers in half and remove seeds. Set aside.
  • Preheat oven to 400 degrees F. Apply thin coating of olive oil to baking sheet.
  • In a medium saucepan, bring water to a boil. Stir in rice. Reduce heat, cover, and simmer for 10 minutes. Remove from heat, and set aside.
  • Place peppers, cut side up, on baking sheet. Lightly coat peppers with olive oil and sprinkle with sea salt and freshly ground pepper. Place in oven and roast for 20 minutes, or until tender and skin starts to brown.
  • While the peppers are roasting, heat olive oil in a medium skillet over medium-high heat. Add onions, garlic, basil, Italian seasoning, salt, and black pepper to skillet and cook for 2 to 3 minutes, stirring frequently.
  • Add tomato and cook for 5 minutes. Spoon in the cooked rice, and stir until heated through. Remove from heat, mix in the feta cheese, and spoon the mixture into the pepper halves. Return to the oven for 5 minutes. Serve immediately.
  • Add cooked rice to tomato mixture, stirring until heated through.
  • Remove from heat. Add feta cheese to rice mixture, stirring until completely combined.
  • Remove peppers from oven. Carefully spoon an equal amount of rice mixture into pepper halves. Return to oven and roast for an additional 5 minutes.
  • Remove from oven and serve immediately.
