Vegetarian Kale Soup

  • Heat olive oil in a large soup pot over medium heat.
  • Add onion and garlic. Cook until onion soft is soft and translucent, about 5 minutes.
  • Add kale and cook until wilted, about 2 minutes.
  • Add broth, tomatoes, potatoes, beans, Italian seasoning, parsley, salt, and pepper. Stir to combine.
  • Bring to a simmer and cook for 25 minutes, covered, or until potatoes are cooked through.
  • Remove from heat. Taste for salt and pepper and adjust, if needed.
  • Serve warm.
