Vegetarian Kale Soup
Ingredients:
- 1 c Onions chopped
- 2 cloves Garlic chopped
- 1 bunch Kale rough chopped
- 6 White Potatoes peeled and cubed
- 2 tbsp Olive Oil
- 8 c Vegetable Broth
- 15 oz Diced Tomatoes 1 can - 15 ounces
- 29 oz Canned Cannellini Beans 2 cans
- 1 tbsp Italian Seasoning
- 1 tbsp Dried Parsley
- .5 tsp Sea Salt or to taste
- .5 tsp Ground Black Pepper or to taste
Instructions:
- Heat olive oil in a large soup pot over medium heat.
- Add onion and garlic. Cook until onion soft is soft and translucent, about 5 minutes.
- Add kale and cook until wilted, about 2 minutes.
- Add broth, tomatoes, potatoes, beans, Italian seasoning, parsley, salt, and pepper. Stir to combine.
- Bring to a simmer and cook for 25 minutes, covered, or until potatoes are cooked through.
- Remove from heat. Taste for salt and pepper and adjust, if needed.
- Serve warm.
