Vegetarian Cauliflower Bolognese
Ingredients:
- 2 lb Cauliflower 1 head, cut up into florets
- 1 c Red Onions 1 onion, chopped
- 2 cloves Garlic minced or pressed
- 2 tsp Dried Oregano
- 1 tsp Dried Basil
- 28 oz Diced Tomatoes 2 cans
- 0.50 c Vegetable Broth
- 0.25 tsp Crushed Red Pepper Flakes
- 1 tsp Sea Salt
- 0.50 tsp Ground Black Pepper
Instructions:
- Place all of the ingredients for the bolognese into a crockpot.
- Place the crockpot on high and let cook for 3.5 hours.
- When done, smash the cauliflower with a potato masher or fork until the florets break up to create a "bolognese."
- Spoon the bolognese over bowls of pasta or zucchini noodles and serve.
