Turkey Lettuce Wraps
Ingredients:
Turkey Filling
- 1 lb Ground Turkey
- 2 tsp Coconut Oil
- 8 oz Mushrooms button or cremini, chopped
- 3 Green Onions chopped
- 3 cloves Garlic minced or pressed
- .25 c Coconut Aminos Or Tamari
- 6 oz Water Chestnuts 1 can, drained, chopped
- 1 tbsp Coconut Sugar
- 1 tbsp Rice Vinegar
Sauce
- 3 tbsp Coconut Aminos Or Tamari
- 2 tbsp Rice Vinegar
- 1 tbsp Honey
- 1 tbsp Dijon Mustard
- 1 tbsp Sriracha Sauce
- .5 tsp Sesame Oil
- .25 c Water
Wraps
- .5 head Iceberg Lettuce 8-12 leaves
- 1 c Shredded Carrots
- .25 c Fresh Cilantro chopped
Instructions:
- For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, green onions, garlic, and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the aminos/tamari, coconut sugar, and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
- For the drizzling sauce: In a small bowl, whisk together the aminos/tamari, vinegar, honey, mustard, Sriracha, sesame oil, and water.
- Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.
