Tomato and Beef Zucchini Noodles

Zucchini….a staple of summer for us! The farm stands are loaded with them (and they are super cheap!) and friends are trying to give them away. And I love it! I can’t get enough of it.

Zucchini and summer squash are so easy to use and you can add them to just about any dish. My kids don’t even notice. Shred up and are you are good to go!

This summer I splurged and bought a spiralizer…and I haven’t regretted it! Making noodles out of vegetables has totally brought my cravings for noodles down to none at all. Everyone in the house enjoys them. A bonus, my kids love to help make them. (I strongly believe if you get your kids involved in making food!)

Tomato and Beef Zucchini Noodles

This dish is simple and doesn’t take much time to throw together. I love quick and yummy!

Ingredients

  • 3 tbsp. olive oil
  • 1 chopped onion
  • 6 cloves of chopped garlic
  • 1 pounds ground beef
  • 1 32 ounce jar of whole tomatoes
  • 1 small can of tomato paste
  • 2 tbsp dried oregano
  • 6 (depending on size) spiraled zucchini
  • sea salt and pepper to taste

Instructions

  • Saute onion and garlic until lightly browned
  • Add ground beef, salt well and cook until no longer pink
  • Add whole tomatoes and tomato paste and stir until well mixed
  • Add seasonings and let simmer until thick.
  • Put in zucchini noodles and allow to simmer until done. We like ours a bit firm so I only cook the noodles for a few minutes.
