Thai Chicken Lettuce Wraps
Ingredients:
- 1 lb Boneless Skinless Chicken Breasts diced
- 1 Bell Peppers red, finely diced
- 1 bunches Green Onions finely sliced
- 1 Carrots finely shredded
- .5 c Fresh Cilantro rinsed and chopped
- .5 c Peanuts chopped
- .5 head Butter Lettuce leaves removed
- 1 tbsp Olive Oil
- .25 c Peanut Butter
- 2 tbsp Lime Juice
- 1 tsp Fresh Ginger minced
- 1 tsp Sesame Oil
- 2 cloves Garlic minced or pressed
- 1 tbsp Coconut Sugar
- 1 tbsp Coconut Aminos Or Tamari
- 1 tsp Chili Sauce With Garlic
- 2 tbsp Coconut Oil
- 1 tbsp Fish Sauce
Instructions:
- Combine lime juice, fresh ginger, sesame oil, garlic, coconut sugar, coconut aminos/tamari, chili sauce with garlic, peanut butter, fish sauce, and coconut oil. Add chicken and make sure the mixture evenly coats the chicken.
- Heat olive oil over medium high heat in a skillet. Once oil shimmers add chicken with sauce to the pan and cook through, 8-10 minutes.
- Arrange butter lettuce cups with hot chicken, cilantro, bell peppers, carrots, peanuts, and green onions to serve.
