Spicy Shrimp Noodles
Ingredients:
- 6 oz Dried Rice Noodles
- 3 tbsp Coconut Oil
- 1 c Green Onions sliced, about 2 bunches
- 8 oz Shrimp raw, medium, peeled and deveined
- 1 Eggs large
- 0.33 c Peanuts unsalted, chopped
- 3 tsbp Ketchup unsalted
- 2 tbsp Lime Juice fresh
- 1.5 tbsp Sriracha Sauce
- 1 tbsp Fish Sauce
- 1 tbsp Water
- 2 tbsp Fresh Cilantro chopped
Instructions:
- Cook noodles according to package directions.
- Heat oil in a large cast-iron skillet over high. Add scallions and shrimp. Cook, stirring often, until scallions are bright green, 1 to 2 minutes. Add egg; cook, stirring constantly, until egg and shrimp are cooked, about 1 minute.
- Add noodles, half of the peanuts, ketchup, lime juice, Sriracha, fish sauce, and 1 tablespoon water. Toss well to combine. Serve in shallow bowls; sprinkle with cilantro and remaining peanuts.
