Slow Cooker Sweet and Sour Chicken
Ingredients:
- 1.25 lb Boneless Skinless Chicken Thighs
- 1 Bell Peppers red, chopped
- 1 Bell Peppers orange, chopped
- 1 Bell Peppers green, chopped
- 1 c Onions diced
- 1.5 c Chicken Broth
- 1 Carrots thinly sliced
- .25 c Coconut Aminos Or Tamari
- 2 tbsp Worcestershire Sauce
- 1 tbsp Chili Sauce With Garlic
- .75 c Ketchup divided
- .5 c Pineapple Juice
- 2 tbsp Cornstarch
- 1.5 tsp Sesame Seeds
- 1 bunches Green Onions thinly sliced
Instructions:
- Add chicken, bell peppers, onion, carrots, tamari, Worcestershire sauce, chili sauce, .5 c ketchup, and chicken stock to a slow cooker. Cover and cook on low until chicken shreds easily about 7 hours. Remove the shredded chicken from slow cooker and cover to keep warm.
- Whisk together pineapple juice and cornstarch and increase the slow cooker to high. Stir pineapple mixture and remaining .25 c ketchup together in the slow cooker and cook, uncovered to thicken the sauce, about 30 minutes. Stir in the chicken. Sprinkle top with sesame seeds and green onions. Serve over white rice or cauliflower rice.
