Slow Cooker Mushroom Pork Ragout
Ingredients:
- .75 lb Pork Tenderloin
- .125 tsp Sea Salt
- .125 tsp Ground Black Pepper
- 1 tbsp Arrowroot Powder
- .75 c Crushed Tomatoes divided
- 1 tbsp Sun Dried Tomatoes chopped
- 1.25 tsp Dried Thyme
- 1.5 c Mushrooms sliced
- .33 c Onions sliced
Instructions:
- Rub pork with salt and pepper; cut in half. In a 1-1/2-qt. slow cooker, combine the arrowroot powder, 1/2 cup crushed tomatoes (2/3 of the total amount), sun-dried tomatoes, and thyme. Top with mushrooms, onions, and pork. Pour remaining tomatoes over pork. Cover and cook on low for 3-4 hours or until meat is tender.
- Remove meat and cut into slices. Stir cooking juices until smooth; serve with pork and noodles or favorite pasta substitute.
