Slow Cooker Loaded Potato Soup
Ingredients:
- 3 slices Bacon cooked and crumbled
- 1 c Onions chopped
- 3 lb Russet Potatoes peeled and sliced
- .5 c Water
- 3.75 c Chicken Broth
- .5 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 2 c Whole Milk
- 1 c Cheddar Cheese shredded, divided
- .5 c Sour Cream
- 4 tsp Fresh Chives chopped
Instructions:
- Cook bacon in a large skillet over medium heat until crisp. Remove bacon from pan, reserving 2 tsp bacon grease in the pan. Crumble bacon. Add onion to bacon grease in pan and saute 3 minutes or until tender.
- Place potato slices and onions in slow cooker. Add water, chicken broth, salt, and pepper. Stir ingredients together. Cover and cook on LOW for 8 hours or until potatoes are tender.
- Mash mixture with a potato masher. Stir in milk and 3/4 of the cheese. Increase heat to HIGH. Cover and cook on HIGH for 20 minutes or until mixture is thoroughly heated.
- Serve soup with a dollop of sour cream and cheese. Sprinkle with bacon and chives.
