Slow Cooker Chicken, Kale, and Sweet Potato Soup
Ingredients:
- 1.5 lb Boneless Skinless Chicken Thighs
- 1 c Onions diced
- 2 Carrots chopped
- 2 stalks Celery chopped
- 4 c Chicken Broth
- 2 Sweet Potatoes peeled and diced
- 2 c Kale chopped
- 1 tbsp Dried Thyme
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
Instructions:
- Add all ingredients except kale to slow cooker, cook on Low for 4-5 hours.
- Add kale and stir in. Let cook an additional 20-30 minutes and serve.
