Slow Cooker Cajun Chicken and Shrimp Creole

Ingredients:

  • 2 lbs Boneless Skinless Chicken Thighs
  • 1 Bell Peppers chopped
  • 1 c Onions large, chopped
  • 2 stalks Celery diced
  • 14.5 oz Stewed Tomatoes 1 can
  • 4 cloves Garlic minced or pressed
  • 2 tbsp Cajun Seasoning
  • 1 lb Shrimp peeled and deveined
  • 1 tbsp Lemon Juice

Instructions:

  • Season chicken thighs with Cajun seasoning then place in the bottom of the slow cooker.
  • Add vegetables, garlic and stewed tomatoes then cover and cook 4 hours on high or 6-7 hours on low
  • In the last hour of cooking, add shrimp and lemon juice.
  • Serve over rice (or riced cauliflower).
