Slow Cooker Cajun Chicken and Shrimp Creole
Ingredients:
- 2 lbs Boneless Skinless Chicken Thighs
- 1 Bell Peppers chopped
- 1 c Onions large, chopped
- 2 stalks Celery diced
- 14.5 oz Stewed Tomatoes 1 can
- 4 cloves Garlic minced or pressed
- 2 tbsp Cajun Seasoning
- 1 lb Shrimp peeled and deveined
- 1 tbsp Lemon Juice
Instructions:
- Season chicken thighs with Cajun seasoning then place in the bottom of the slow cooker.
- Add vegetables, garlic and stewed tomatoes then cover and cook 4 hours on high or 6-7 hours on low
- In the last hour of cooking, add shrimp and lemon juice.
- Serve over rice (or riced cauliflower).
