Shrimp Scampi

Ingredients:

  • 1.5 lb Shrimp peeled and deveined
  • 2 tbsp Butter or ghee
  • 2 cloves Garlic minced
  • .25 c Dry Vermouth
  • 1 tbsp Lemon Juice
  • 1 tsp Lemon Zest
  • 2 tsp Fresh Parsley flat, finely chopped
  • 1 tsp Sea Salt
  • .5 tsp Ground Black Pepper

Instructions:

  • Place shrimp on a plate and pat them completely dry with a paper towel then season with salt and pepper.
  • Melt butter in a large skillet over medium heat.
  • Add garlic and cook for 1 minute.
  • Add shrimp, in one layer, without moving them, for 1 minute then turn them over and cook for 2 minutes more.
  • Add in the vermouth and lemon juice.
  • Boil the liquid until slightly thickened, about 30 seconds.
  • Stir in the lemon zest and chopped parsley into the sauce.
  • Serve over pasta of choice.
