Shrimp Avocado Salad
Ingredients:
Salad
- 12 Shrimp peeled and deveined
- .5 tsp Italian Seasoning
- .25 tsp Paprika
- .25 tsp Sea Salt
- .25 tsp Ground Black Pepper
- 4 c Baby Spinach
- 2 c Romaine Lettuce chopped
- 1 c Cherry Tomatoes
- 2 Avocado diced
- .25 c Pecans chopped
- .25 c Sliced Almonds
- .25 c Feta Cheese crumbled
Dressing
- .33 c Olive Oil
- 2 tbsp Apple Cider Vinegar
- 1.5 tbsp Dijon Mustard
- 2 tsp Lemon Juice
- .125 tsp Sea Salt
- .125 tsp Ground Black Pepper
Instructions:
- Preheat the grill (or grill pan) to medium-high. Using a brush, clean the grill and grease with oil using a long pair of tongs with some folded paper towels dipped in some olive oil.
- Season your shrimp with salt, black pepper, Italian seasoning, and paprika.
- Combine the dressing ingredients of olive oil, vinegar, mustard, lemon juice, salt, and pepper in a jar or a bowl and mix well until all ingredients are incorporated and set aside.
- Grill shrimp for 3-4 minutes on each side or until shrimp is opaque.
- Add the spinach and romaine to a large bowl. Add 1/3 of the dressing and toss to combine.
- Add the avocado, tomatoes, pecans, and almonds.
- Pour the remainder of the dressing over salad and toss to combine. Divide salad among serving bowls.
- Top each salad bowl with some cooked shrimp and feta (if desired) and serve immediately.
