  • Preheat the oven to 200C/400F and get out a baking tray.
  • Toss broccoli with coconut oil, salt, and pepper.
  • Place into the oven for 15-20 minutes, tossing it half way through cooking.
  • Watch closely that it doesn’t burn.
  • Remove from the oven, allow to cool slightly then stir and squeeze lemon juice the broccoli and toss with the pine nuts.
  • Enjoy warm or as a cool salad.
