Rice and Beans
Ingredients:
- 1 c Onions 1 onion, medium, chopped
- 2.5 oz Bell Peppers .5 green bell pepper, rinsed and diced
- 1 tbsp Olive Oil
- 14.5 oz Stewed Tomatoes
- 15.5 oz Canned Black Beans (or beans of your choice)
- 1 tsp Dried Oregano
- 0.50 tsp Garlic Powder
- 1.5 c White Rice uncooked
Instructions:
- Sauté onion and green pepper in oil, in a large pan, until tender. Do not brown.
- Add tomatoes and beans (including liquid from both), as well as oregano and garlic powder. Bring to a boil.
- Stir in rice and cover. Reduce heat to low for 20 minutes.
- Remove from heat, and let stand for 5 minutes before serving.
