Quinoa, Chickpea, and Avocado Salad
Ingredients:
- 1 c Cherry Tomatoes quartered
- 15 oz Canned Garbanzo Beans 1 can, rinsed and drained
- 2 tbsp Red Onions minced
- 2 tbsp Fresh Cilantro minced
- 1 tbsp Lime Juice
- 1 tsp Sea Salt
- .25 tsp Ground Black Pepper
- 1 Cucumbers diced
- 1 Avocado diced
- 1 c Quinoa cooked
Instructions:
- Combine all the ingredients except for avocado and cucumber, season with salt and pepper to taste.
- Keep refrigerated until ready to serve.
- Just before serving, add cucumber and avocado.
