Quinoa Avocado Salad
Ingredients:
- 3 tbsp Lime Juice
- 2 tbsp Avocado Oil
- .5 tsp Garlic Powder
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
- 3 c Quinoa cooked and cooled
- 2 Avocado medium, peeled and chopped
- 1 c Cherry Tomatoes halved
- .5 Cucumbers diced, about 1 cup
- .5 c Fresh Cilantro chopped
- .25 bunch Green Onions 1-2 stalks, chopped
Instructions:
- Whisk lime juice, oil, garlic powder, salt and pepper in a medium bowl.
- Add quinoa, avocados, tomatoes, cucumber, cilantro and green onions; toss gently together with lime dressing until combined.
