Quinoa and Black Bean Salad
Ingredients:
- 1 c Quinoa cooked
- 1 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 2 tbsp Fresh Cilantro chopped
- 1 bunches Green Onions chopped
- 2 cloves Garlic minced or pressed
- 1 tsp Cumin ground
- 15 oz Canned Black Beans drained and rinsed
- 1 Tomatoes seeded and diced
- 1 cup Frozen Corn Kernels defrosted
- 1 tsp Paprika
- .5 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- In a large bowl, make the dressing by mixing lemon juice, olive oil, cilantro, scallions, garlic and cumin.
- Add drained and rinsed beans, chopped tomatoes, and corn to the bowl.
- Add quinoa to the salad and mix everything thoroughly.
