Pumpkin Twice Baked Potatoes
Ingredients:
- 4 Russet Potatoes
- .5 c Pureed Pumpkin
- .5 c Sour Cream
- .5 c Cheddar Cheese shredded
- .25 c Whole Milk
- 2 tbsp Fresh Chives chopped
- 1 tsp Sea Salt
- .125 tsp Dried Nutmeg ground
- .25 tsp Garlic Powder
- 1 tbsp Butter
Instructions:
- Preheat oven to 400 degrees.
- Pierce skin of potatoes then bake for 45 minutes.
- Halve the potatoes lengthwise and carefully scoop out the flesh from the inside, leaving the skins intact.
- Mash the potato flesh and remaining ingredients together until smooth.
- Spoon the mashed potato mixture into the potato skins until all of it is gone.
- Bake the potatoes for another 20 minutes.
