Pumpkin Twice Baked Potatoes

Instructions:

  • Preheat oven to 400 degrees.
  • Pierce skin of potatoes then bake for 45 minutes.
  • Halve the potatoes lengthwise and carefully scoop out the flesh from the inside, leaving the skins intact. 
  • Mash the potato flesh and remaining ingredients together until smooth.
  • Spoon the mashed potato mixture into the potato skins until all of it is gone.
  • Bake the potatoes for another 20 minutes.
