Pork Tenderloin with Pears and Blue Cheese
Ingredients:
- 1 lb Pork Tenderloin
- 2 tbsp Olive Oil
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 2 Pear cored and sliced
- 1 Red Onions sliced
- 3 tbsp White Balsamic Vinegar
- .25 c Blue Cheese cumbled
Instructions:
- Preheat oven to 500 degrees
- Heat oil in an ovenproof skillet. Season pork with salt and pepper. Sear pork tenderloin on each side 2-3 minutes to brown on all sides. Add pear and red onions to pan. Put entire pan into the oven.
- Roast for 8 minutes in the oven or until onions are tender. Pork should be cooked through, temperature should be 140 degrees.
- Remove Pork from pan and let rest for 5 minutes before slicing.
- While pork rests deglaze the pan with the vinegar, scraping the skillet to loosen any browned bits. Return pork to the pan and sprinkle the top with cheese.
