Pork Tenderloin with Pears and Blue Cheese

  • Preheat oven to 500 degrees
  • Heat oil in an ovenproof skillet. Season pork with salt and pepper. Sear pork tenderloin on each side 2-3 minutes to brown on all sides. Add pear and red onions to pan. Put entire pan into the oven.
  • Roast for 8 minutes in the oven or until onions are tender. Pork should be cooked through, temperature should be 140 degrees. 
  • Remove Pork from pan and let rest for 5 minutes before slicing. 
  • While pork rests deglaze the pan with the vinegar, scraping the skillet to loosen any browned bits. Return pork to the pan and sprinkle the top with cheese.
