Pork Tenderloin with Melon Salsa
Ingredients:
- 1.25 lb Pork Tenderloin 1 tenderloin
- 1 tbsp Olive Oil
- .75 tsp Sea Salt divided
- 2 c Cantaloupe finely chopped
- .25 c Fresh Cilantro rinsed and chopped
- .25 tsp Paprika
- .25 tsp Cinnamon ground
- .25 tsp Cumin ground
- .25 tsp Chili Powder
- .25 c Orange segments, halved
- 2 tbsp Lime Juice
- 1 bunches Green Onions chopped
Instructions:
- Preheat oven to 450 degrees.
- On a baking sheet, brush pork tenderloin with oil, then season with .5 tsp salt, paprika, cumin, and cinnamon. Roast for 30 minutes or until cooked.
- While pork roasts. Peel and finely dice cantaloupe. Peel orange, pull out orange slices and cut into thirds. Combine cantaloupe, cilantro, orange, lime juice, chili powder, .25 tsp salt, and green onions.
- Let pork rest 5 minutes before slicing. Serve with Cantaloupe salsa on top.
