  • In a large pot, warm the coconut oil. Add the chopped chicken and sauté until browned and no longer pink.
  • Next add the onions, garlic, celery, and carrots and cook until tender. You may need to add a little extra oil.
  • Then add in the chicken broth and bay leaves and bring to a boil
  • Add salt and pepper to taste.
  • Remove the bay leaves and stir in spinach right before serving.
