Slow Cooker New Mexican Red Pork Chili
Ingredients:
- 1 lb Boneless Pork Ribs trimmed
- 3 tbsp Tomato Paste
- 2 tbsp Chili Powder
- 1 tbsp Olive Oil
- 1 cloves Garlic minced or pressed
- .75 c Chicken Broth
- .25 c Brewed Coffee
- 1 tbsp Tapioca Flour
- 2 tsp Coconut Sugar
- 2 tbsp Fresh Cilantro
- 1 tsp Sea Salt to taste
- .5 tsp Ground Black Pepper
Instructions:
- Add tomato paste, chili powder, olive oil, garlic, broth, coffee, tapioca, and coconut sugar into slow cooker stirring well to combine.
- Season pork with salt and pepper then nestle into slow cooker.
- Cover and cook until pork is tender, 5–6 hours on low or 3–4 hours on high.
- When cooked, use tongs or a spoon to break pork into 1-inch pieces.
- Stir in cilantro and season with salt and pepper to taste.
