Mushroom Meatloaf
Ingredients:
- 1.5 lb Ground Beef
- 8 oz Cremini Mushrooms minced
- 1 c Onions minced
- .5 c Gluten-Free Bread Crumbs
- 1 tbsp Olive Oil
- 1 tbsp Worcestershire Sauce
- 2 tsp Fresh Thyme leaves only
- 2 cloves Garlic minced
- 2 Eggs
- 1 tsp Sea Salt
- .25 tsp Ground Black Pepper
Instructions:
- Preheat the oven to 350 degrees.
- Combine onions, mushrooms, garlic, thyme, worcestershire, salt and pepper in a food processor. Pulse until they are evenly minced to same size.
- Heat oil in a large skillet over medium-high heat. Add mushroom mixture and saute 5-6 minutes.
- Combine mushroom mixture, beef, bread crumbs, and eggs using your hands or a wooden spoon until evenly mixed.
- Put meatloaf into a 8x4 or 9x5 pan and press into each of the edges or if you don't have a pan form into an even loaf on a sheet pan, can use parchment paper for easier clean up.
- Bake for 60 minutes or until it reaches a temperature of 160 in the middle.
- Let rest 5-10 minutes before slicing into 6 slices.
