  • Preheat the oven to 350 degrees.
  • Combine onions, mushrooms, garlic, thyme, worcestershire, salt and pepper in a food processor. Pulse until they are evenly minced to same size.
  • Heat oil in a large skillet over medium-high heat. Add mushroom mixture and saute 5-6 minutes. 
  • Combine mushroom mixture, beef, bread crumbs, and eggs using your hands or a wooden spoon until evenly mixed. 
  • Put meatloaf into a 8x4 or 9x5 pan and press into each of the edges or if you don't have a pan form into an even loaf on a sheet pan, can use parchment paper for easier clean up. 
  • Bake for 60 minutes or until it reaches a temperature of 160 in the middle. 
  • Let rest 5-10 minutes before slicing into 6 slices.
