Mediterranean Steak Salad
Ingredients:
Steak Marinade
- 1 lb Skirt Steak
- 1 Lemons sliced
- 1 tbsp Dried Oregano
- 3 cloves Garlic minced or pressed
- 1 tsp Sea Salt
- .5 tsp Ground Black Pepper
- 2 tbsp Olive Oil
Salad
- .5 c Balsamic Vinaigrette use our recipe or your own
- 1 c Cherry Tomatoes halved
- .25 c Feta Cheese
- 8 oz Romaine Lettuce rinsed and chopped
- 8 oz Arugula
- 1 Bell Peppers sliced
Instructions:
- Heat up a grill pan or large skillet on medium high heat. Add steak to pan, grilling on each side for 3-4 minutes to get a medium rare. If you desire it to be more done leave on another minute or two per side. Let rest for at least 5 minutes before cutting strips against the grain.
- While steak rests, toss Salad ingredients together with the Balsamic Vinaigrette to coat the lettuce. Adjust how much vinaigrette you use based on how much you like. Top with the sliced steak.
